Prosciutto with Lime and Melon

Half a ripe melon 
8 slices of prosciutto - like La Quercia
1-2 sprigs of mint
Half a lime
Piment d’Ville

Slice melon into long wedges and arrange on a plate. Drape slices of prosciutto over the melon. Thinly slice fresh mint leaves and scatter over the prosciutto. Squeeze the lime over the plate to hit the prosciutto and melon. Garnish with a few pinches of Piment d’Ville.
