Boonville Barn Collective Olive Oil
Our Boonville Barn Collective Olive Oil is made of a mix of over 25 varieties of olives. The olives are from our family ranch, the Bucket Ranch, and the orchard itself is comprised of about 500 trees. Previously used as a test plot for UC-Davis, the olives are a combination of Italian and Spanish varieties. Because we have such a wide array of trees, each variety is at a different stage of ripeness when harvested. Less ripe green olives add spiciness while the more ripe purple olives are smooth and buttery in flavor. Our 2021 harvest took place on November 16, 2021.
The olives are harvested mostly by hand (Yes by hand and yes this takes a long time and yes we were out there helping harvest, too) by our crew and other locals in November over a few days. But! Everything heads to the mill the day it is harvested in order to maintain the highest quality of oil. Even with 500 trees, our production is pretty low (our 2019 yield was 55 gallons) since olive trees don’t reach maturity until they are 100 years old (!!!). At that point, they produce more consistently compared to having some years with a big harvest and some years will few olives on the trees. We’re at about year 20 or so with some of these trees so they are still babies. We use this as our main cooking oil and also as a finishing oil. It has a strong but not too pungent flavor that we think you’ll enjoy.
Our olive oil is much more robust in flavor than a generic bottle you find at the grocery store. It's pungent, peppery, and incredibly flavorful. It's great as a regular cooking oil, a finishing oil, and as a base for salad dressings. I would steer you away from baking with this olive oil due to its strong flavor, but if we're being honest, I'll probably still use it in olive oil based cakes so cook away!
